Today's menu features Smoked Turkey Pesto Sandwiches. A turkey sandwich is a timeless classic. Now for some extra fluff to let it stand out in your memory.


Let's gather the ingredients.


Begin by purchasing a turkey breast from your local grocery store. To season it, you'll need salt, pepper, garlic powder, and thyme. Start by generously and evenly seasoning the underside. Then, gently loosen and pull back the skin to thoroughly season the breast, ensuring an even coating. We typically use a good amount of salt for a dry brine technique. After seasoning the breast, place the skin back and season it as well.


Place the turkey on the smoker to cook. Depending on the size and temperature, the timing can vary. Poultry is considered cooked when the internal temperature reaches 165 degrees. Make sure to adjust accordingly.


When your turkey is done its cooking cycle, brush a bit of melted butter on the skin and cook at a higher temperature for about 10-15 minutes. This will crisp the skin nicely and give you more of the golden look.

Now that the turkey is on the smoker, it's time to start the pesto. There's nothing like fresh made pesto. It certainly gives this sandwich some extra pizazz. You will need olive oil, pine nuts, lemon, parmesan cheese, basil and salt & pepper.

Put these ingredients in a blender and mix until smooth. Be careful not to over blend. You want a little texture when its done. Once it's blended, taste it. Yes taste it. Always best to taste while you cook. Sometimes I find that I add a little more salt or more a little more basil etc. This is how you create foods you love most. So taste it!

Once the turkey is done cooking and the pesto is complete, it's sandwich prepping time!

Slice the turkey and the tomatoes. We love fresh sourdough bread which is usually found in the bakery section of your grocery store. Add a slice of swiss cheese or a cheese of your liking. Sprinkle some pepper and of course add the pesto. Brush the bread with olive oil and place them back on the smoker to heat until the cheese is melted and the bread is toasted.

Pesto:

1/2 Cup Olive Oil

1/2 Cup of Pine Nuts

1 Cup Parmesan Cheese

2 Cups Fresh Basil

1/4 Cup of Fresh Lemon Juice

2 Garlic Cloves

Salt & Pepper to Taste
