I'm always inspired to create delicious dishes! The more I cook at home, the more excited I am to experiment with new ideas. So let's put on your favorite tunes and create a meal. Perhaps some Italian inspired music for the mood. The right plan, the right tools, good wholesome ingredients, and some background music make a perfect mixture for a perfect experience. Let's make some memories and maybe a new dinner idea to add to your routine.
Today's menu features the perfect spaghetti sauce or pizza sauce. To have the perfect sauce on your spaghetti totally makes or breaks the dinner.... Am I Right? If the sauce isn't good then it's just not worth it.
Let's start with gathering the ingredients.

I typically use fresh cut tomatoes, and a can of crushed or diced tomatoes. The flavor of the canned fire roasted are fabulous if you can find them. Next a shallot or onion, garlic, red pepper flakes, fresh thyme, basil and salt and pepper. Yes, it's that simple to create the perfect sauce with these ingredients.
This is best cooked in a large skillet. Sauté your minced shallot or onion until its softened with a little olive oil. Add in your red pepper flakes and garlic. Cook for another minute or so then add the tomatoes, and thyme. You can mince your thyme or add a few of the whole pieces (removing the stems once cooked). Cook on low for 10 to 15 more minutes stirring occasionally. I add in the sliced basil in toward the end for extra flavor and leave some to top after.
I find its always important to taste as you cook. If you like it a bit spicier then add a little more red pepper flakes. Do you prefer more or less onion. At the end you are making this to your liking! Be creative!
For this particular dinner I spiraled a zucchini instead of the traditional pasta and served this with my sauce.

Place the zucchini in a separate pan. Spiraled zucchini are best steamed with very little water, and for only 1 to 3 minutes or so, for the best results.
Top with fresh basil and parmesan. Now it's time to enjoy the perfect spaghetti sauce!
